Our story

Created for real kitchens, real schedules and real questions

Vital Kitchen Lab began with a simple observation: many home cooks do not need more complicated recipes. They need a reliable way to understand ingredients, organise a week of meals and recognise the small decisions that make cooking easier. Our lessons translate professional kitchen thinking into approachable routines that fit flats, family homes and busy working weeks across Singapore.

We teach through short demonstrations, guided practice and flexible planning tools. Every module connects technique with a useful outcome, from building a balanced breakfast to preparing three adaptable components for several lunches and dinners. The aim is not perfection. It is calm, repeatable progress.

Meet the lead instructor

Amelia Tan, culinary educator

Amelia combines professional kitchen training with more than a decade of experience teaching adults who are starting, restarting or simplifying their home-cooking practice. Her approach is patient, methodical and deeply practical. She focuses on transferable skills: organising a work surface, tasting with purpose, choosing the right pan and turning one preparation into several meals.

She is joined by guest educators for ingredient sessions, food styling demonstrations and planning workshops. Together, the team creates an online classroom that feels considered, welcoming and useful from the first lesson.
